It can be really tricky finding a snack that is healthy and easy to make. Most kids like crisps but the crisps that are available in shops do not provide growing children with nutrients they need to enhance their health and development. This is why I love kale crisps, they are very easy to make and provide an impressive range of nutrients.
Kale is such a brilliant vegetable, it is very versatile and is packed with nutrients.
It contains fibre, antioxidants, vitamin A, K, C, B6, calcium, magnesium, potassium and iron!
Making crunchy crisps is an easy way to make it tempting to kids but it's also a great snack for adults. If you're just making this for adults then chilli flakes are a great alternative topping.
They are also gluten and dairy free so great for anyone dealing with an intolerance.
Recipe: This makes a large bowl to share
Ingredients:
250g kale (1 bag)
2 tbsp of coconut or olive oil
4-5 tbsp nutritional yeast
1/2 tsp garlic powder
sprinkle or salt and pepper
Method:
Preheat the oven to 150 degrees.
Wash and dry the kale as well as you can. Remove the tough stems.
Rub oil into the leaves with your hands until it is all coated.
Add kale to a large pan and ensure they are laid in a single layer and have some room around them. If the kale is too crowded it won't go crispy. You may need to use 2 trays.
Sprinkle over the nutritional yeast, garlic and seasoning and give a good shake to make sure the kale is covered nicely.
Bake for 10 minutes, then remove and toss the pan to make sure the kale cooked evenly then add back into the oven for another 10 minutes.
Remove from the oven, if the kale is not crispy enough you can put it back into the over for a few more minutes.
Serve and enjoy!
