My kids love cereals, but with some much added sugar we try to avoid them. This is a quick and simple recipe for a healthy granola for the whole family.

Recipe: Makes a weeks worth of granola
500g of oats (you can use gluten free oats too)
3 tbsp coconut oil
2 tbsp honey
1-2 tsp of cinnamon (depending on how spiced you like it)
1 tsp ground ginger
100g pumpkin seeds
50g walnuts (you can use any nut you prefer)
50g almonds
50g goji berries
Method:
Preheat the oven to 150C (fan, 170C conventional oven), preheat a large baking tray.
Once warm add coconut oil to pan to melt, then oats and mix to coat oats. Add honey, cinnamon and ginger and stir until all the oats are coated.
Cook for 20 minutes, then remove from the oven and add the nuts and seeds, stir everything and return to oven for another 10 minutes.
Remove from oven and add goji berries, leave to cool, once cooled fully transfer to airtight container. They should last at least 2 weeks in storage.
N.B. You can cook the oats for longer if you prefer them darker and more crispy, just make sure to stir them every so often to make sure they don't burn.
