Black Bean Brownies

Everyone enjoys a brownie, but as parents, they typically aren't considered a healthy snack option for our kids whenever they ask for one. These brownies, however, are different. They contain less sugar than regular brownies and are higher in fibre and other nutrients, making them an excellent choice for a snack or lunchbox treat.
They are also very simple to prepare, allowing you to easily make a batch that lasts throughout the week.

Recipe:
Makes: 12 brownies
Prep: 30 minutes
Ingredients:
1 x 400g tinned black beans drained and rinsed
65g oats
1 tsp cinnamon
2 eggs
1 tsp baking powder
30g cacao powder
4 tbsp honey
80g butter
40g dark chocolate chips (optional)
Method:
Add all ingredients into a food processor, except the dark chocolate chips. Blend until smooth, scraping down the sides a few times. It may take a few minutes to minutes to fully break down the beans.
Add baking parchment to a baking dish (18cm x 22cm approx).
Once the mixture is smooth pour into the dish, spread the brownie mix evenly across dish and sprinkle the dark chocolate chips over the top.
Bake for 20-25 minutes until cooked through. Use a cocktail stick to check if it is cooked, remove from the oven and leave to cool.
Optional toppings: chopped walnuts or almond
