Matcha Energy Protein Balls

These are my go-to snacks of the moment, so quick to make, delicious, healthy, and great for a little boost of energy.

They are packed with nutrients from the nuts, high in protein, and antioxidants from the matcha. Great for a busy mum (or dad) needing a quick pick-me-up.

Why not make a batch to pop in the fridge? They can be done in 15 minutes and make enough for a week of snacks.

Recipe:

Makes 12 balls

Preparation: 15 minutes


160g Medjool dates

30g vanilla protein powder (I use Pulsin)

1 tsp matcha powder

150g cashew nuts

100g walnuts

1 tsp coconut oil



Method:

Soak dates in water for 5 minutes and drain well. This step is optional; I find the dates blend a lot better.

Add cashew nuts and walnuts to a food processor and blitz until crumbs.

Add remaining ingredients and blitz until fully combined.

Roll into small balls and pop in the freezer for 10 minutes, then store in the fridge for up to 2 weeks (if they last that long!)
