These little balls have been a staple in our fridge for a few years now. They actually have their own special name... My kids call them Peppy balls, were not really sure why!
These are great to have ready for when you need a quick snack. The dates in them provides the natural sugars for a boost of energy, the nuts and seeds contain healthy fats and fibre that will keep you full and the cacao is full of antioxidants, magnesium, calcium, zinc and selenium.
They are also great for popping in a lunch box or taking out for a snack to have on hand when the kids get hungry.
RECIPE:
200g of mixed nuts
200g medjool dates
2 tbsp chia seeds
2 tbsp flax seed
2 tbsp cacao (you can substitute for chocolate cocoa powder if you don't have cacao)
1 tbsp coconut oil (if solid, you can soften in microwave)
METHOD:
Soak the dates in hot water for 5 minutes to soften. While soaking, add the nuts, chia and flax seeds and cacao to a food processor, and process until you get a fine mixture. Then drain the dates of water and add to the processor with the coconut oil and blend until the mixture comes together in a dough like texture.
Roll into walnut sized balls, pop the balls in a container and pop into the freezer for 10 minutes to firm up and then keep in the fridge. They will stay fresh for up to 2 weeks.
