I love a chocolate brownie! There is something so wonderful about the rich taste and indulgent texture, but the brownies you buy in the shops can be very high in sugar and refined carbs. That is why I love these and have been making them for my family for years! They taste great and don't contain any added sugar, as they are made from dates. They do contain natural sugar but also come with fibre and are packed with nuts full of healthy fats.
These are gluten and dairy free, so great if your dealing with intolerances or allergies (Avoid if you are sensitive to nuts!) They are super easy to make and just need 15 minutes in the fridge so can be whipped up pretty quickly, they also last 2-3 weeks in the fridge, so will last, that's if you can avoid eating them all!
Ingredients:
100g walnuts (plus a few to use for topping)
100g pecan
85g cashews
(You can use other nuts if you choose)
400g of medjool dates
70g raw cacao
1 tsp cinnamon
1 tsp vanilla
Recipe:
Firstly soak the dates in warm water for 5 minutes, this softens them and makes them easier to use, make sure you remove the stones first.
While the dates are soaking add the nuts to a food processor and blitz until they are ground, add the cacao and cinnamon and pulse to mix together.
Drain the dates, and add to the food processor with the vanilla. Mix until the nuts and dates are blended together into a dough mixture, you may need to scrape the processor around a few times to make sure everything is mixed properly.
Scoop brownie mixture out and into a dish approx 8inch x 10inch lined with baking paper. Press down until firm and flat. Press some whole walnuts into the top, or other nut of choice. Put into the freezer for 15 minutes to set. Then cut into squares and keep in the fridge.
Keep in an airtight container in the fridge for up to 2 weeks.
