Sweetcorn & Spring Onion Quesadillas

This is one of my go-to snack and lunch options for my family. Quesadillas are not only quick to make but also incredibly versatile, with endless options when it comes to fillings. They can be customised to suit various tastes and dietary preferences, making them a favourite in our household.

Quesadillas are crispy and golden-brown, making them perfect finger food for little ones. Their manageable size and easy-to-hold shape make them an ideal choice for toddlers and young children.

Not only are quesadillas a great snack option, but they also work well for lunch boxes. Making them an excellent choice for busy days when you need a quick and nutritious meal that can be packed and taken on the go.


Recipe:

Makes: 4 quesadillas

Cooking time: 15 minutes


Ingredients:

4 medium sized whole-grain wraps

80g sweetcorn

50g grated cheddar cheese

1/2 tsp paprika

2 spring onions (these can be swapped for peppers or other vegetables)

salt and pepper 


Method:

Mix the sweetcorn, paprika, spring onions and grated cheese together in a bowl, season with salt and pepper.

Divide the mix between the wraps spreading on one half of each wrap. Fold over remaining half of the wraps and gently press together. 

Heat a pan to a medium-high heat.

Add each wrap to pan and cook for 2-3 minutes on each side until lightly browned.

slice and serve.

They keep for 2-3 days in the fridge
